Tofu in Your Diet
Tofu may not be an item placed on your weekly grocery list, but if you have diabetes it
should be. What is tofu? It is a cheesy looking substance made from soybeans and calcium.
It is easy to use and it picks up the flavors of other foods.
Tofu is a great addition to the diet of people with diabetes because it has no cholesterol
and is virtually free of saturated fat. It is low in calories and also an excellent source
of calcium and protein.
To incorporate tofu into a meal plan, you can count four ounces as one-medium-meat
exchange. This is a fairly large portion, considering one ounce of part skim mozzarella is
one medium-meat exchange also.
Tofu can be found in the vegetable section of most grocery stores or health food stores.
It is usually placed in water. Once the container is opened, the water should be changed
daily. Tofu will stay fresh up to seven days in the refrigerator.
