Lemon Squares Rich Pastry:
Combine flour, Equal, and salt in medium bowl. But in margarine with a pastry knife until mixture resembles coarse crumbs. Sprinkle with vanilla and lemon rind. Mix with hands to form dough. Press dough evenly on bottom and 1/4 inch up sides of 8 inch square baking pan. Bake in preheated 350 degree oven until lightly browned, about 10 minutes. Cool on wire rack. Lemon Filling:
Beat eggs and Equal. Mix in lemon juice, margarine, and lemon rind. Pour mixture into baked pastry. Bake in preheated oven at 350 degrees until lemon filling is set, about 15 minutes. Cool on wire rack. Makes 16 servings. Per serving: 104 calories, 1 g protein, 7 g carbohydrates, 8 g fat, 27 mg cholesterol, 109 mg sodium. Food exchanges: 1/2 bread, 1 1/2 fat. |
