Black and White Bean Salad

2 cups finely chopped red onions 1/3 cup red wine vinegar
2 T olive oil 1/4 cup chopped red pepper
2 T minced parsley 2 cloves garlic, chopped
2 T Equal sugar substitute 1/4 tsp salt
1/4 tsp pepper 1 can great northern beans, rinsed, drained
1 can black beans, rinsed, drained Red pepper rings

Saute' onions in oil until crisp.  Remove from heat and cool to just warm. Stir vinegar, red pepper, parsley, garlic, Equal, salt, and pepper into onions. Pour onion mixture over combined beans in bowl. Mix well. Garnish with pepper rings.
